This sparkling wine is the result of the expert and conscientious vinification carried out by the Collavini winery. The grape variety used is 100% Ribolla Gialla. The origin of the vines lies in the territory of Corno di Rosazzo and Manzano. The harvest takes place in advance to preserve the freshness and acidity of the grapes. The vinification involves the use of vineyards cultivated in the eastern hills with spurred cordon and Guyot, are bred to obtain grapes suitable for producing a quality sparkling base. In the harvest, the manual harvesting of the selected grapes is carried out only in the morning after the breeze from the north-east has dried the thin layer of night moisture. The delicate pressing of the whole grapes is followed by the natural decantation of the must for a whole night. The first fermentation, at 14 oC, takes place partly in steel and partly in barriques. In the following spring, the yellow ribolla is made to referment, very slowly, to 12 μc, in large horizontal autoclaves; followed by the aging sur lies (on the yeasts) for a period never less than 30 lunar cycles. Bottling is carried out in complete absence of oxidation. Over 12 months of bottle are needed to complete the long aging process. Finally, the bottles are packaged and hidden manually under an original yellow tissue paper as if to preserve all the love that wise hands have been able to create in almost four years of work.

The aspect shows a brilliant straw yellow color with vague greenish reflections, sparkling effervescence fine and persistent. The scent is a delicate and fine olfactory delight, with aromas reminiscent of walnut peach, white figs, green apple and that blend with velvety and mineral notes. The taste in the mouth is very fresh, rich in structure, with endless nuances also citrus and long aromatic persistence.
