Rosé Gold produced by Bottega is a rosé sparkling wine obtained using the Martinotti-Charmat method, a typical technique for producing sparkling wines that aim to enhance freshness and aromaticity. The process begins with a careful selection of Pinot Noir grapes, which are subjected to a soft pressing and a short maceration on the skins, enough to give the wine its characteristic pale pink color with bright reflections. After the first fermentation in stainless steel at a controlled temperature, useful for preserving the primary aromatic component, the second fermentation takes place in an autoclave, during which the addition of selected yeasts and sugars allows the natural development of carbon dioxide. This step is essential to achieve fine and persistent perlage. The wine is then kept in contact with the yeasts for a short period of aging, which helps enrich its complexity and smoothness of taste, before stabilization and bottling under isobaric conditions.
