The Prosecco DOC Extra Dry Bio from Cantina Bottega is obtained from Glera, Chardonnay and Pinot grapes grown according to the principles of organic viticulture, where the use of synthetic chemicals is excluded and priority is given to maintaining the natural fertility of the soil. After the harvest, which generally takes place in mid-September, the grapes are destemmed and subjected to soft pressing, followed by clarification of the must. The first fermentation takes place in steel with selected yeasts, while the second fermentation takes place in an autoclave according to the Martinotti Method at approximately 14 °C, so as to preserve freshness and varietal aromas. At the end, the wine is cold-stabilized, filtered and bottled, while also maintaining a reduced sulphite content compared to conventional wines.
Features of this Prosecco from Bottega
From an organoleptic point of view it has a bright straw yellow colour and a fine, persistent perlage. On the nose it is elegant, with floral and fruity scents in which notes of ripe apple stand out, accompanied by light mineral nuances. In the mouth it is fresh, soft and delicate, with a balanced and never aggressive acidity that makes the drink harmonious and smooth.
