This red wine produced in Sicily is able to describe the territory and the ability of Assuli cellar. It praises the denomination IGT Terre Siciliane and it is produced with 100% Perricone, cultivated in Mazara del Vallo, in the district of Trapani. The soils here are composed by clay, pebbles, limestone and minerals and the lands are located at 100-150 meters elevation. The plants agre trained with cordon spur pruning method and the density of the vineyard reaches 5000 stumps per hectare. The mediterranean climate offers warm winters and windy summers. The harvest starts in the third decade of October, but it can vary due to the maturation level of the grapes. The soft pressing is followed by 25-30 days fermentation, managed at 26-27°C. The aging is developped in big barrels made of oak.
Features of the wine produced by Assuli
Intense ruby red colour with purple shades. Its perfume is deep and recalls mature red fruits, graphite and violet. The taste is balanced and characterized by soft tannins.

This red wine is great with baked meat and medium aged cheeses. It has to be served at 16°C in a high and wide wine glass.
