This Montefalco Sagrantino “Memoira” from “Colpetrone” winery is produced with 100% Sagrantino grapes. After the manual harvest, the grapes are pressed and then subjected to fermentation with maceration at a controlled temperature of 24-28°C. Once the alcoholic fermentation is finished, maceration continues at a temperature of 29°C. The wine is aged in French oak barrels for 12 months where the malolactic fermentation takes place, for another 6 months it will continue aging in the bottle.
