This wine from Cecchi winery comes from the vinification of mainly Cabernet Sauvignon grapes, to which variable percentages are added, depending on the Merlot vintage. The origin of the vineyards is always located within the territory of the Maremma Toscana. The vinification involves the use of the traditional red method with prolonged maceration on the skins. Alcoholic fermentation lasts a week at a controlled temperature of 25°C to which is added a period of ten days of maceration on the skins. During these two weeks, pumping over and delesage is carried out. The malolactic fermentation happens in steel. The refinement of the wine involves an aging phase which provides that the Maremma Toscana DOC Rosso ages in steel for one part and a part in wood.
Characteristics of this Tuscan Wine
The organoleptic examination shows an intense ruby red color. The scent has a markedly fruity and floral olfactory profile, which highlights notes of ripe cherries, currants, blackberries, roses and violets, on a delicately spicy background. The taste is expressed with a full-bodied, elegant and long-lasting taste.
