Pelago is an elegant blend produced with 50% Montepulciano, 40% Cabernet Sauvignon and 10% Merlot. The grapes are cultivated in Osimo, located in the area of Conero, Marche. The elevation of the hill swings between 150-200 meters above the sea level, with south-east exposition. The deep soil is characterized by clay, limestone and loam. The production capacity of the vineyard varies depending on the vintage, but it is set around 50-70 quintals per hectare. The manual harvest is planned at the beginning of September for Merlot, at the end of the month for Cabernet sauvignon and ends with Montepulciano in October, when the grapes reach the perfect maturation. The soft pressing and the elimination of stalks are followed by fermentation, managed at 28°C in steel for 12-14 days. After the malolactic fermentation, the wine ages in barriques for 14 months. The maturation continues in the bottle for other 12 months before the selling.
Features of the Pelago wine
Deep ruby red colour. Its elegant scent recalls coffee, black pepper, liquorice, tobacco, herbs and straw. The taste is characterized by red fruits, vanilla and minerals. Defined tannins guarantee a great persistence.

It is excellent for the whole meal, but it is great with red meat, game and aged cheeses. Excellent with meat, game and aged cheeses. It has to be served at 16°C in a wide wine glass that helps oxygenation.
