The red wine Sfursat di Valtellina is a prestigious wine and represents the symbol of the Rainoldi winery. Its main characteristic comes from the production method. The “Sfursat” wine is made with withered grapes left until December-January to concentrate sugar and aromas in the grape. This is a full, round, intense and complex wine. It is perfect for long aging periods if kept in fresh places by keeping the bottle laid down. There is the pre-fermentative cold maceration under temperature control and the several reshuffling of the skins. The malolactic fermentation takes place naturally and ends in spring time. The bottle refinement in oak barrels lasts 18-20 months. The final aging period takes place in bottles for at least one year in the company cellars.

This wine is perfect with sapid and strong courses. The aged cheeses matching in particular with the “Bitto” cheese, are the best pairings. The grilled red courses and the game in humid are also very good. It is suggested to serve it in a Grand Ballon wine glass and it needs a settling time of 3 hours and it has to be served at 18°C.
