Cantina Bava’s Langhe Nebbiolo is a red wine made from 100% Nebbiolo grapes grown in the prestigious Scarrone cru, in the municipality of Castiglione Falletto, one of the most renowned areas in the Barolo region. The vineyard lies at an altitude of around 300 metres on calcareous-clay soils rich in white marl and sand, which give the wine an elegant structure and a distinct savoury and mineral character. Vinification is carried out in accordance with Langhe tradition and follows an approach very similar to that used for Barolo. The grapes are harvested by hand and carefully selected before fermentation, which takes place in large 53-hectolitre oak vats, where maceration on the skins also occurs to extract colour, aromas and tannic structure. Once alcoholic fermentation is complete, the wine is transferred to stainless steel tanks to complete malolactic fermentation, a crucial stage for softening the tannins and stabilising the flavour profile. It is then aged in tanks and in bottle until the spring following the harvest, to preserve its freshness and balance.

From an organoleptic perspective, Langhe Nebbiolo boasts a bright, vibrant ruby red colour. The bouquet is refined and typical of the grape variety, with hints of violets, small red berries and subtle spicy notes that enrich its aromatic complexity. On the palate, it is elegant and well-structured, with a full but not excessive body, supported by good acidity and tannins that are present yet already well-integrated and rounded. The finish is savoury, harmonious and of good length, with a clear terroir character that reflects the typical balance of the Scarrone cru.
Recommended pairings with this red wine from Cantina Bava
It pairs particularly well with red meats that are not overly elaborate, such as roasts and grilled cuts, but also goes well with medium-bodied braised and stewed dishes, where the protein content of the dish helps to soften the wine’s tannins. It is also suitable for rich first courses, such as pasta with meat sauce or risottos with mushrooms, where the wine’s structure supports the dish’s complexity without overpowering it. Medium-aged or mature cheeses also make a harmonious pairing, thanks to the contrast between the cheese’s savoury notes and the Nebbiolo’s tannic character. Serve at a temperature of 16–18°C.
