This spectacular Vigor is produced with 100% Passerina grapes, cultivated in Marche. The vineyards, that are between 6 and 20 years old, are trained with guyot method and their elevation swings between 150 and 300 meters above the sea level, with west/south-west exposition. The plants average production is around 95 quintals per hectare. The manual harvest is planned between the end of August and the beginning of September. The maturation level of the grapes is controlled carefully, in order to determine the perfect day to begin with the harvest. This consent to keep the sourness that identifies this wine. The fermentation process starts after static decanting of the must. It is managed at 14-16°C in inox tanks for 8-10 days. The malolactic fermentation preserves the original perfumes of the fruit. All the production phases are developed without oxygen, in order to keep aromas and freshness. A brief period of aging in steel before the bottling.
Features of the "Vigor" white wine
Gold yellow colour, enriched by intense and persistent perfumes that recall wild flowers and fruits like apple and apricot. The freshness of the taste is balanced by a pleasant softness. Dry and fruity final.
