The denomination is Franciacorta Rosé Brut DOCG made with 100% Pinot Nero grapes. The vineyards are cultivated at 250 meters above the sea level and the soil is clay and limestone. The vines are cultivated with the Guyot method and the density is 5000 trees per hectare. The grape harvest takes place in the half of August and the grapes are pressed very softly with a pneumatic press. There is a selection of the must and the alcoholic fermentation is made in stainless steel tanks at 16-18°C. The vineyards are vinified separately and assembled in the following spring after several tastings. Then it takes place the re-fermentation. The yeasts refinement lasts 36 months.
Characteristics of the Franciacorta Rosé Brut DOCG
It has a light and bright pink color. The smell has bread crust, berries, wild strawberry and almond aromas. The taste is direct, clean and elegant. There is structure and sapid aromas too.
