Fiano d’Avellino DOCG is produced with 100% Vitis Apiana, the ancient name for Fiano, quoted by Plinio il Vecchio in his famous “Naturalis Historia”. Diffused in the heart of Irpinia, this special vine variety resisted through the years, helped by the hands of the winemakers. The vineyards are located in the district of Avellino, in Campania. The harvest begins in the first two weeks of October and it is followed by soft pressing. Fermentation at controlled temperature and cooled maceration last 12 days. The aging is developed in inox for three months and continues in the bottle for at least 2 months.

The organoleptic analysis shows a straw yellow colour enriched by scents that recall flowers, exotic fruits, wild fennel, sage and hawthorn. Its taste is pleasant and easy to recognize due to its typical flavour of dried fruits.
Recommended food pairings while tasting this Fiano d’Avellino
It is excellent with rice with seafood, brill fillet, grilled seabass, fresh ship cheese and white meat with herbs. It has to be served at 8°C in a high, wide wine glass that helps the diffusion of the perfumes.
