The Cremant de Bourgogne Grande Cuvée by Maison Veuve Ambal comes from a blend of Pinot Noir, Chardonnay, Gamay and Aligoté from the vineyards located in the municipality of Corton, in the French region of Burgundy. During the harvest, only the perfectly ripe grapes are harvested, which are then taken to the cellar and subjected to soft pressing, alcoholic fermentation and refermentation according to the the Classic Method. The refinement on the lees takes from 12 to 18 months and then the dégorgement takes place: this means that residues that have accumulated on the neck of the bottle are eliminated. Once this last phase is finished, the champagne is dosed by adding the dosage liqueur.
Characteristics of this Cremant de Bourgogne
The organoleptic examination shows a straw yellow color with golden reflections and a persistent perlage. The olfactory notes recall citrus fruits, dried fruit, hints of pastry but also hints of vegetables. On the palate it strikes for its creaminess and freshness.
Suggested food pairings while tasting this Cremant de Bourgogne
Serve at a temperature of 6-8°C in the characteristic balloon flute glass, a glass with a slightly narrower base in order to enhance the aromas of the product and not lose its perlage. Try it in combination with smoked fish based appetizers, fish tartare but also dry pastries.
