From the vinification in a blend of refined and selected grapes that only the Amalfi Coast is able to let express the best. The vines used are 60% Falanghina and 40% Biancolella. The origin is in the territory of Ravello and Scala, Amalfi Coast. The harvest follows the first decade of October Manual harvest management. The vinification provides that the grapes harvested manually arrive in the cellar intact, after destemming and crushing are subjected to soft pressing. The flower must after cold static clarification and inoculum of selected yeasts, ferments at the temperature of 18 vol C for about 20/30 days. Parking for 4 months in stainless steel tanks.
Characteristics of this Campania wine
To the appearance that is evident from the organoleptic examination, the wine appears straw yellow in color, with slight golden hints. The bouquet opens to the nose with floral notes of jasmine, iris and lily, then turns to fruity hints of white peach, mulberry and citrus. The taste is played on a nice balance between soft and creamy components, and savory, mineral and fresh parts. The finish has a good persistence and hints of aromatic herbs.
Suggested food pairings while tasting this white wine
To be combined with fish dishes, it is excellent with gratinated mussels. The optimal serving temperature is 8 ºC.
