Collio Pinot Grigio praises the denomination white wine DOC. It is produced in the area of Collio, specifically in the district of San Floriano del Collio, that includes Località Uclanzi and Località BIvio. It is composed by 100% Pinot Grigio, cultivated on hills soils characterized by marl and sands of Eocenic origin. The plants are trained with guyot method and produce around 80 quintals. The manual harvest starts in the first decade of September. After soft pressing, the must is purified through static decanting. The alcoholic fermentation, that lasts 8-10 days, is managed through a continuous control of the temperature, that is set on 16-18°C. The aging on lees is developed in steel containers and consists in continuous “bâtonnages” that last for at least 4 months from the end of the fermentation.
Features of the white wine “Collio Pinot Grigio”
The aspect shows a light straw yellow colour. Its perfume has a good intensity; it is classy and personal and recalls acacia flowers. The taste is dry, bitter but pleasant. It represents the perfect balance between sourness and alcohol.

This wine goes on well with savoury dishes, soups, rice and white meat, especially if boiled. It has to be served at 10°C in a high, tapered wine glass.
