From the vinification of Corvina and Corvinone 70%, Rondinella 10%, Oseleta 10%, Croatina 7%, others 3%. The origin of the vines is in Verona, Veneto. The vinification involves fermentation with indigenous yeasts, at an uncontrolled temperature in a truncated cone-shaped oak vat, daily manual punching down, until the fermentation naturally slows down. Without any use of adjuvants and fermentation activators. It then rests in untoasted oak for 5 years. This wine was born from the desire to vinify Amarone in the most natural and traditional way possible, starting from a very careful selection of the grapes. This wine has not been filtered or clarified, but only racked twice.
