Soffocone di Vincigliata from Cantina Bibi Graetz is a wine deeply rooted in the region from which it originates, produced exclusively with grapes from the vineyard of the same name located in the hills of Fiesole. This is a pure Sangiovese (in the most recent versions), conceived as an authentic expression of this grape variety and its terroir, characterized by soils rich in galestro and an ideal exposure between southwest and south, elements that contribute to the elegance and freshness of the wine. Fermentation takes place with indigenous yeasts, without temperature control, for about ten days, followed by a short period of maceration on the skins. This method allows you to naturally extract aromas and structure, respecting the character of Sangiovese. The wine is then aged for about 18 months in large 30 hl wooden barrels, a choice that favors evolution without covering the varietal profile with excessive wooden notes.

From an organoleptic point of view, it has an intense ruby red color with garnet reflections, an index of good concentration and evolution. On the nose it offers an elegant and complex bouquet, dominated by notes of ripe red cherry and small fruits, accompanied by floral hints of purple and light shades of aromatic herbs and spices. On the palate it is structured but balanced, with a good acidity typical of Sangiovese that gives freshness and momentum. The tannins are ripe and well integrated, while the finish is harmonious and persistent, with fruity and slightly spicy returns.
Recommended pairings with this Tuscan red wine
It pairs with red meats, roasts, braised meats and game, but also with first courses with rich sauces and aged cheeses, with which it finds an excellent balance thanks to its acidity and tannic texture. The recommended service temperature is around 16–18 °C.
