This Spumante Metodo Classico wine is a blanc de noir produced using Nebbiolo grapes from the municipality of Gattinara, Vercelli. Following the manulae harvest, soft pressing of the grapes produces the flowering must, which is then placed in special steel tanks for fermentation. This is followed by the addition of selected yeasts and subsequent refermentation in the bottle. Refinement requires a 48-month stay on bottled yeasts, followed by dégorgement with the addition of liqueur de tirage.
Characteristics of this Nebolè
It has a very delicate straw yellow color with golden hues. On the nose it strikes with notes of yellow fruit, floral notes, bread crust and yeasts. On the palate it is fresh, aromatic and with excellent persistence.

Excellent at full meal, as an aperitif and with raw fish. Serve at 4-6°C.
