The grape variety used for the production of this sensational traditional Sicilian wine is 100% pure Syrah. The provenance is the classic one of the DOC of Castiglione di Sicilia. Harvest is carried out by hand during the second ten days of September. Vinification involves de-stemming and maceration in contact with the skins at a controlled temperature of 28° C for about 30 days. Fermentation takes place at a controlled temperature of 26-28° C with constant pumping over and punching down; malolactic fermentation in oak barrels. Finally, the refinement follows, during which the wine ages 14 - 16 months in French oak barrels. With subsequent 18 months of bottle aging.
Sicilia Sole di Sesta DOC Cottanera’s features
A ruby red color with violet reflections. Nose scent opens with ample notes of sweet fruit and fresh Mediterranean nuances combined with spicy notes of chocolate and black pepper.
