This excellent Sauvignon Meroi in honored by the DOC certification. This wine is produced in the Buttrio hamlet in the Udine province. The grapes used are 100% Sauvignon and the denomination is Meroi Sauvignon DOC. The vineyards are extended for 1 hectare and they are exposed at south, south-east at 100 meters above the sea level. The soil is marl and the cultivation method is the French Guyot method. The grapes harvest takes place in the first days of September. The fermentation takes place in barrels for 15-20 days and they are added the yeasts and the malolactic fermentation takes place only if natural. The refinement takes place for 10 months in wood and further 2 months in bottle. Before being bottled, the wine is lightly clarified through a light filtering process.
Characteristics of this Sauvignon Wine
The Sauvignon DOC Meroi is bright with a straw yellow color. The smell has elder’s flowers aromas at the beginning followed by tomato, pepper and nettle aromas and it ends with the flower’s sage hints. The taste is fresh and sapid with a clean palate and ready-to-drink.
Suggested pairings while tasting this white wine
It is perfect with leaves soups, mussels and clams soups, aubergine salad and asparagus omelette but especially with crabmeat. It must be served at 10-12°C in a “renano” wine glass.
