This Salento red wine from Cantina Due Palme is made from a blend of Aglianico and Primitivo grapes. Grown in the vineyards of Cellino San Marco, the grapes benefit from deep loamy-clay soils with a good amount of gravel. Once harvested in early September, the best bunches are carefully selected and then left to dry in the fruit cellars. Fermentation takes place in steel vats at a controlled temperature of 23-25°C for about two weeks. Finally, the wine is blended and aged in French and American oak barriques and then again in the bottle.
Characteristics of this Apulian wine
It has a very deep garnet red colour. The bouquet is particularly complex: red fruit, violet, rose, tobacco, spices and chocolate. On the palate, it is well balanced with a delicate tannic texture. Very long finish.
Recommended pairings with this Salento red wine
Particularly suitable with grilled meat, mature cheeses and game. Serve at a temperature of 18-20°C.
