The famous Ribolla Gialla, a symbol of Friuli Venezia Giulia is a fabulous product of the prestigious winery Villa Russiz. It praises the denomination DOC Collio del Friuli. It is produced with 100% Ribolla Gialla grapes, cultivated around the headquarter of the company, in the southern side of the hill. Here the soils are mainly composed by marl. The grapes are harvested manually during the fresh hours of the morning. Then, the soft pressing of the entire grapes extracts the free-run must that is immediately poured into the fermentation containers with a continuous control of the temperatures. The wine rests on its sediments for at least 8 months and then it is bottled (about 8-9 months after the harvest). It is an important wine of Collio that is the result of a careful manual selection, a perfect maturation and a scrupulous wine-making, that considers only the use of steel containers, in order to preserve the freshness that characterize this wine. A refined and elegant white that is fruity, pleasant and persistent perfect for a great dinner.
