This is a very prestigious wine produced by the Pollenza cellar since 2001. It has an amber color which remember the gold and it has an immense class. The Pius IX Mastai is a raisin wine which comes from the single variety wine making of the Sauvignon Blanc grapes. Despite of being a raisin wine is classified as meal wine which thanks to its great quality and potential it is joinable to many courses. It is a product coming from the Tolentino area in the Macerata province with grapes property of the Pollenza estate. The ground where the Sauvignon Blanc vines are cultivated is alluvial so rich of calcareous with a medium deep structure. This land is between the 130 and the150 meters above the sea level. The cultivation method is the French Guyot which is in perfect synergy with the Sauvignon Blanc grapes. The harvest is made into different steps: from the half of October to the end of November. The winemaking process which starts late, previews a withering of the grapes when they are still on the tree. The fermentation takes place naturally without any additional yeasts and the temperature is controlled at 15°C. Everything takes place in little vitrified cementer tanks. The maturation lasts 15 months also in vitrified cementer tanks. It can be aged until 15 years.
Characteristics of this Passito wine
It has an amber color and its scent is a wide fan of chamomile and lavender in addition to apricots, candied citrons, ginger and saffron aromas. It is dense and sweet as maple syrup. It is fresh, sapid, with a good acidity with a persistent flavor of over-ripped fruit and aromatic honey aftertastes.

The food tradition matches this wine with local sweets such as very sugared pies covered by cream or chocolate. A very good match is sugared cookies or donuts covered by glaze.
