Rocca di Frassinello is the symbolic wine of the winemaking project born from the collaboration between Italy and France in the Tuscan Maremma, and is considered the winery's first label, also defined “grand vin” according to the Bordeaux classification. It is a red wine of great structure and longevity, produced from a blend of Sangiovese, Merlot and Cabernet Sauvignon from selected vineyards located near Gavorrano, on soils rich in skeleton and at around 90 metres above sea level. Winemaking takes place in temperature-controlled steel, with malolactic fermentation carried out completely, followed by a long aging in barriques, mostly new, for approximately 24 months, and a further period of rest in the bottle before marketing. This path allows to obtain a complex, deep and at the same time balanced wine, with a great evolutionary capacity over time.
Characteristics of this Tuscan wine
From an organoleptic point of view it has an intense ruby red colour with slight garnet reflections. On the nose it is rich and articulated, with notes of ripe red and black fruit that intertwine with sweet spices and aromas derived from aging in wood. In the mouth it shows an important but well-balanced structure, with soft tannins that make the sip round and harmonious, supported by a good freshness that lengthens its persistence.

In pairings it is best expressed with structured and tasty dishes. It is ideal with red meats, roasts, game and stewed preparations, but also with mature cheeses with a strong taste, which manage to sustain its intensity and aromatic complexity. The recommended service temperature is around 16-18
