Princely, refined and immensely elegant. Vinified with a blend of 34% Cabernet Sauvignon, 32% Merlot, 14% Cabernet Franc, 20% Petit Verdot. Harvesting, in keeping with Ornellaia winery tradition, was done by hand in 15 kg crates, and the grapes were sorted on a double sorting table before and after destemming and then subjected to a soft crushing. Each variety and each parcel was vinified separately. Alcoholic fermentation took place in stainless steel vats at temperatures between 26-30°C for a week, followed by maceration for a total of approximately 10-15 days. Malolactic fermentation took place mainly in oak barrels (70% new and 30% second passage). The wine remained in barriques in the Ornellaia cellar at a controlled temperature for a period of about 18 months. After the first 12 months it was blended and then reintroduced into the barriques where it spent a further 6 months. The wine remained in the bottle for a further 12 months before release.
Characteristics of Bolgheri Superiore Ornellaia wine
The organoleptic examination reveals a deep ruby red colour, wonderfully bright and luxurious. The perfume on the nose persuades with intense and fine sensations of red pulp fruit, with an elegant spiciness and hints of mushroom and bark. The taste in the mouth is balanced, ample, round, with velvety tannins and an alcoholic structure that hints at a great capacity for ageing. A generous Ornellaia in this vintage, persistent and mineral, with a long finish played on fruity and spicy notes.
