The red Venetian wine Kairos of the Zymé cellar is a prestigious red wine very refined and elegant and represents all the traditional aspect of the Valpolicella.
Characteristics of this red wine of Zymé Winery
The red Venetian wine Kairos of the Zymé cellar is dry and it is used a blend of 15 local vines of the Valpolicella. Kairos, the name of the wine, comes from the Greek and means opportunity, expediency and suitable for whatever occasion. The peculiarity of these wines is that the grapes used are identical to the Harlequin, the taller brother. It is the same typology and the same blend but they come from different years and so they didn’t have the same luck concerning the weather conditions and the harvest. Kairos born from this necessity, to have a good wine with a great quality/price ratio. The picking, the winemaking and the refinement starts with the picking of the grapes depending on the varietal maturation of each vine. It rests on a trey, as for the tradition of the Amarone. This short withering lasts the time of the harvest. Then it is put in stainless steel tanks where sometimes the must is handled without any additional yeasts or biotechnology elements. Between the cold maceration and the fermentation passes 20-25 days. After 10 days from the racking, the grapes go to the French oak barrels for 24 months without any decanting.
