The vinification of 100% autochthonous grapes of Salamino di Santa Croce. The origin is the classic one of the territory of Concordia in the province of Modena. The vinification involves the soft crushing, first fermentation in steel and refermentation in bottle with foam and stop on the fine lees, without disgorging.
