A sublime and refined wine, of inestimable intrinsic value and significance, for the territory in which it is produced. The Zymé Winery wanted to give meaning to every detail for this precious bottle. Starting from the label, inspired by the figure of Harlequin, it represents the mask, the tear that falls on the face and the tomato stains on the dress of the character. For the Harlequin vinification, the blend grapes were crushed all together without destemming, then fermentation in a cement vat with indigenous yeast for about 30 days, during which frequent punching, delestages and above all visual, olfactory control by the men cause the achievement of the right degree of maturation. Then proceed with racking and decanting for about 10 days. This is followed by a double refining process for a total of 30 months using new French oak barrels of 225 liters (200%), without any racking. The wine is bottled without fining and undergoes further refinement in the bottle for at least 2 years. Harlequin is produced only in important vintages, through a blend of which the percentages are secret, and which provides for the use of a minimum of 15 vines, 4 white and 11 red. Characteristics of the HARLEQUIN IGT wine
The organoleptic analysis aimed at highlighting the characteristics of this particular wine highlights at a visual level a wine of brilliant ruby red color with garnet reflections, which are evident with aging, of good intensity. Dense in rotation with clearly evident glycerines. At the olfactory level, the mix of fruit, flowers and minerals is well perceived alternating with a well-defined sensation of volume and detail. The taste level brings the taster into another dimension, filled with a sensation of enveloping richness and complexity, fruit and spices alternating with flavors of fruit jam and undergrowth, then tobacco, cinnamon, nutmeg, cloves combined with minerals enhance the depth of the puzzle. It closes with persistence and persuasive sweetness.
