The denomination for this sensational wine from the Cà del Bosco winery is Franciacorta Millesimato DOCG. The blend is composed of Chardonnay grapes for 65%, Pinot Bianco for 13%, and Pinot Nero for 22%. The origin of the 15 Chardonnay vineyards, from the average age of 33 years, lies in the municipal area of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. The two Pinot Bianco vineyards, with an average age of 26 years, are located in Passirano. And the eight Pinot Nero vineyards, with an average age of 25 years, are located in Erbusco and Passirano. The vinification for the Franciacorta Vintage Collection is the result of a careful selection of the grapes and a skilful vinification conducted in full compliance with the Cà del Bosco Method. The grapes, freshly picked by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "spa of the berries". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in small oak barrels. To seek the maximum aromatic complexity and expressive power, without losing elegance, the barrel elevation lasts only 5 months. A pair of floating tanks allows the decanting of wines by gravity, from small barrels to aging tanks. After 7 months from the harvest, the cuvée is created. The Vintage Collection Dosage Zéro 2013 is the result of a skilful combination of 25 base wines of Chardonnay, Pinot Bianco and Pinot Noir that give the finished product a particular profile, pure and sincere, the result of the best expression of the terroir and of the man who he sensed the character and the potential. The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to guarantee its traceability.
Characteristics of this Vintage Collection Dosage Zéro
The organoleptic examination shows an intense straw yellow appearance, with a persistent and very fine perlage. The scent is rich in fruity aromas reminiscent of apple, apricot and peach, followed by citrus hints and notes of hazelnut and freshly baked bread. The taste on the sip is full and complex, with a good structure and a persistence characterized by a light and pleasant hint of bitter almond.
