Franciacorta Brut DOCG is a classic method sparkling wine from Cantina Contadi Castaldi. Winery that has selected among this magnificent territory of Franciacorta the most famous vineyards and winemakers rich in expertise and traditional experience. For the creation of this Franciacorta are used Chardonnay 75%, Pinot Nero 15% and Pinot Bianco 10%. The vinification takes place through a soft pressing and after the phase of decantation the selected yeasts are added. The fermentation in stainless steel has a duration of 20 days. The long aging of 7 months takes place partly in steel and partly in barrique. In the following month of May the sparkling wine is bottled and closed with crown corks for refermentation and left to age in bottle on the lees for 20 to 26 months. The last stage of processing involves disgorging which consists in removing the cap on which the lees have deposited. The bottle is then closed with the traditional cork with metal cage and left to age for another 3-4 months.
The characteristics of Franciacorta Brut DOCG
The wine has a straw yellow color with greenish reflections with fine and persistent perlage. The nose is fresh, with hints of linden and citrus. On the palate it has sapid veins, with good harmony and personality with a long and enjoyable finish.

To be served in the flute at a temperature of 6-8°C. Excellent as an aperitif, it goes well with appetizers, fish appetizers, fish tartare and also goes well with cold cuts and fresh cheeses.
