Evocative name that recalls passion and style. These elements are well represented in the new Pas dosé produced by Monte Rossa, that although never forget its origins: “Coupé” means in French “To Cut”, that’s what in the oenological world recall Blends. The main percentage is always Chardonnay with a small percentage of Pinot Noir that never exceed 3%. The grapes are cultivated in the DOCG area of Franciacorta, between Bornato, Brescia, Cellatica, Erbusco, Monterotondo, Provaglio, Provezze, Cologne,Cazzago, Passirano, Adro. After a careful selection, the grapes are harvested manually and placed in boxes. Soft pressing and selection of the best parts of the grapes. Each Cru is vinified separately. The fermentation is managed both in wood (44%) and in steel (56%) tanks. The aging lasts at least 24 months.
Features of this Franciacorta wine
Shiny straw yellow colour, with a soft, faint and persistent perlage. Its perfume recalls floral hints of elder and white peach that turn in vegetal and sea sensations where almonds dominate. The taste is wide and fresh, with a good balance between sourness and persistence.
Recommended food pairings while tasting this Sparkling wine
It is excellent for rich happy hours and great with cheese, cold cuts,sushi, sashimi and seafood. It has to be served at 6°C in a high, tapered wine glass.
