Monteleone Winery’s Etna Bianco DOC is a wine made exclusively from Carricante grapes, a native Sicilian variety that is one of the most representative of the Etna appellation. The vineyards are situated on the eastern slope of the volcano, in the Sant’Alfio area, at an altitude of around 900 metres, on volcanic soils composed of sand, ash and minerals that give the wine a distinct terroir character characterised by freshness, savouriness and crisp acidity. Vinification is carried out with the utmost delicacy to preserve the varietal identity of Carricante. The grapes are harvested by hand in the early hours of the morning and transported to the winery in small crates. After destemming, the grapes undergo soft pressing, followed by static settling of the must for approximately 48 hours. Fermentation takes place in temperature-controlled stainless steel tanks, so as to preserve the primary aromas and the freshness of the fruit. Ageing takes place in steel and partly in concrete for around six months on the fine lees, with periodic bâtonnage to enhance the wine’s complexity and structure. The wine is then left to rest in the bottle to complete its development before release.

From an organoleptic perspective, Etna Bianco has a bright straw-yellow colour with greenish highlights. On the nose, it offers a refined and characteristic profile, with notes of white flowers, citrus fruits, green apple and subtle mineral and salty hints. On the palate, it is a taut and vertical wine, characterised by pronounced acidity and a marked savouriness that prolong its flavour progression. The palate is fresh, balanced and persistent, with a clean, consistent finish that echoes the citrus and mineral notes perceived on the nose.

From a gastronomic perspective, this wine pairs perfectly with fish dishes, particularly delicate preparations such as sashimi, tartare and carpaccio, where its acidity and minerality can shine through without overpowering the food. It is also very suitable for shellfish, fish soups and grilled or baked seafood main courses, as well as pasta dishes with light fish or vegetable sauces. Its fine structure and savoury notes make it an interesting choice with fresh or lightly matured cheeses, where it helps cleanse the palate and maintain a balance of flavours. The ideal serving temperature is between 8 and 10 °C.
