The Rosé wine Didì is deliacate in the name and in the character. It is a very prestigious and refined wine produced by the Il Pollenza cellar. The grapes used are blended between a Syrah, Pinot Nero and Montepulciano and this blend permitted it to receive in 2010 the IGT certification which certifies the Typical geographic production area which is limited to 5.600 trees. The ground cultivation of this wine is characterized by alluvial elements rich of calcareous. The vines are cultivated according the Guyot French method and the harvest is from the end of August for the Syrah grapes to the second half of September for the Pinot Nero. The wine making process is in white whit a short maceration of the grapes at 8°C. The alcoholic fermentation take place in vitrified cementer tanks and it need frequent batonnage.
Characteristic of this rosè wine
It has some little rose and violet aromas with a fabulous wood strawberries flavor. It is fresh, young and pleasant. It is never tannic.
Suggested matches while tasting this wine
It is perfect with all the fish courses, also well-structured and with grilled white meats. It is good also with pizza especially if it is with vegetables.
