It is a cuvèe sparkling wine dedicated to the founder Valentino Paladin and it is produced only in the best years. The grapes are previously picked to keep the fresh acidity and the aromas, then they are softly pressed. The fermentation takes place at 17°C to exalt the fruity aromas. The re-fermentation is made with the Charmat method with several pumping over to exalt the refinement and the fragrance. It follows a bottle refinement to exalt the balance and the softness.
Characteristics of the Cuvée brut
It has a straw yellow color with a fine and elegant perlage. The smell is delicate, long and floral. The taste is fine and dry with a fresh sensation, a good structure and a long persistence.
