The vinification of this white wine from Friuli, from the Castello di Spessa estate, is the result of the use of pure Chardonnay grapes. The origin is that of the vineyards located in Spessa di Cividale, in the DOC Friuli Colli Orientali area. The harvest is manual and takes place in the second week of September. The vinification requires that the grapes are softly pressed after a light skin maceration of about 6 hours at 4°C. The must obtained is statically cold decanted. The fermentation takes place at 16°C and the subsequent maturation "sur lies" always continues in stainless steel tanks at a controlled temperature with periodic bâtonnage.

Upon organoleptic examination, this white wine has a straw yellow color with greenish reflections; it becomes more charged during aging. The nose has a fine olfactory picture with hints of hawthorn, golden apple and bread crust. The taste on the palate confirms pleasant elegance and good minerality. Deep ruby red color.
Suggested food pairings while tasting this white wine from Friuli
Excellent as an aperitif or when paired with lean appetizers, soups, fish dishes. Try it with grilled squid. The optimal serving temperature is 10°C in a high and wide glass which concentrates the delicate aromas on the nose.
