Vinification of Pinot Noir in purity for this sensational Cuvée Spciale from the Maison Comte de Montaigne. The vinification according to the manufacturer's tradition involves the method based on the double fermentation of the must at a controlled temperature and with the second fermentation in the bottle. The aging on the yeasts is more than triple that allowed by the disciplinary and lasts 15 months, this to give greater complexity to the wines. Aging is 5 years of which 1 year in wooden barrels. The fineness of the perlage of our Cuvées is given by this long aging, by a noble raw material and by a perfectly controlled cellar temperature; fresh dry and constant.
