The Cannonau DOC wine is a red wine of the Sardinia region. The grapes that give life to this fantastic wine are located in the valley of Ordone and Dorgani, favorite areas for the production of Cannonau. The grapes used is 100% Cannonau, is harvested manually, crushed, de-stemmed and stored in traditional wooden vats; then begins fermentation in contact with the skins that lasts about 12 days. At the end of fermentation begins the separation from the marc. The aging takes place half in wooden barrels and half in steel containers, where malolactic fermentation takes place.
The characteristics of Cannonau wine
This Cannonau has an intense ruby color. The nose is very fruity with notes of sweet spices and raspberry. The palate is full-bodied, tannic and very balanced.
The recommended pairings at Cannonau di Sardegna
To be served in large crystal glasses at a temperature of 18-20ºC; it is advisable to decant the product 2 hours before to enhance its qualities. It goes well with pasta dishes with meat sauce, stewed and grilled red meat, game and mature cheeses.
