The name “Fortunae” comes from Fanum Fortunae, the ancient name of the city of Fano, that is located in the centre of the production area of Bianchello del Metauro, one of the local white grapes of Marche. 100% Bianchello, cultivated on lands full of clay. 100 quintals per hectare. The manual harvest is planned around the second half of September. The maturation of the fruits is controlled in order to plan exactly the date of the harvest. This process helps to keep the right level of acidity that represents the typical freshness of this wine. The fermentation process starts after static decanting of the must. It is managed at 14-16°C in inox tanks for 8-10 days. The malolactic fermentation preserves the original perfumes of the fruit. 3 months aging in steel before the bottling.
