Demà originates in southwest Sardinia, in the Sulcis area, from pure Vermentino grapes grown in hilly vineyards near the sea, on calcareous-clayey soils and in a Mediterranean climate characterized by hot, breezy summers and mild winters. The harvest takes place during the coolest hours to preserve the aromatic integrity of the grapes. In the cellar, after destemming and soft pressing, the must is subjected to a short cold maceration and subsequent gentle pressing. Fermentation takes place in steel at a controlled temperature between 16 and 18°C, to enhance varietal freshness. The wine then ripens in steel on the fine lees with periodic bâtonnage for a few months, followed by a brief aging in the bottle before marketing.
Characteristics of this Vermentino Demà
On organoleptic examination it appears with a pale straw yellow colour, crossed by greenish reflections that highlight its youth. The aroma is intense and immediate, with well-defined fruity and citrus notes, accompanied by floral notes and a slight Mediterranean tinge typical of the grape variety. On the palate it is fresh, savoury and harmonious, with an agile but well-balanced structure. The mineral component and the typical slightly bitter vein on the finish contribute to a feeling of cleanliness and gustatory persistence, making the sip dynamic and smooth.
Recommended pairings with this Sardinian wine
As for food pairings, Demà is best expressed with dishes based on fish and seafood, shellfish and molluscs, but it also pairs well with light Mediterranean dishes such as seafood appetizers, fish salads and delicate first courses. Its freshness also makes it suitable as an aperitif wine. The ideal serving temperature is 8–10°C, so as to maximize the aromatic component and lively taste freshness.
