From 85% Glera and 15% Pinot Noir grapes comes the Prosecco DOC Rosé millesimato extra dry from Cantina Borgo Molino. The vineyards are located at 90-180 m asl and are partly hilly, of morainic and sandstone origin and with a clay bottom. After the manual harvest in September, the grapes are destemmed and then gently pressed at a controlled temperature. The first fermentation takes place at 14-16 ºC at a controlled temperature and leads to the transformation of the must into wine.By vinification in red of Pinot Noir is obtained the peculiar rosé color while the perlage is obtained with the Martinotti method in autoclave, where the second fermentation takes place. The final phase of aging takes place in bottle for 2-3 weeks.
