This Apulian red wine from the Tenute Girolamo winery is made from pure Primitivo grapes grown on the hills of Alto Salento. It undergoes 6 months of ageing in limited edition French oak barriques. After the harvest, the grapes undergo further drying in the cellar for approximately 4 weeks. Following soft pressing, maceration and fermentation in stainless steel for about ten days. The wine is then ready for the final stage of ageing.
Characteristics of this Apulian wine
It has a very intense red colour tending towards violet. The olfactory profile recalls candied fruit, red fruits and spices. On the palate it is sweet and pleasantly dry.
Recommended pairings with this Apulian red wine
Excellent as a meditation wine or with dry pastries. Also try it with grilled meat and mature cheeses. Serve at a temperature of 16-18 C°.
