Pure vinification of the best selections of 100% pure Sangiovese. From the Ripe al Convento vineyard, at an altitude between 350 and 450 m, this wine is the result of a scrupulous selection that begins in the vineyard and continues in the cellar with the manual selection of each grape. A Brunello Riserva with a strong personality and extraordinary longevity. The maceration of the grapes for winemaking lasts about 30 days. Then the wine ferments again to completely carry out the malolactic which was carried out immediately after the alcoholic one. The selected aging containers were those of Slavonian oak barrels and French oak barriques. The aging time from harvest to January 1st of the sixth following year, after spending at least 2 years in wood and 6 months in the bottle.
Characteristics of the Brunello di Montalcino DOCG RIPE AL CONVENTO wine
A wine of excellent quality is presented to the organoleptic examination. The appearance is of a beautiful intense ruby red color with garnet hues, clear and with a nice consistency. The aroma on the nose is intense and complex where the fruity component prevails at first with hints of small red and black berries such as plum, blackberry and black currant. In the finish emerge spicy notes of vanilla and roasted coffee, cocoa and tobacco. The taste in the mouth is warm, soft and balanced, rich in dense tannins well supported by the alcohol content and acidity in good balance with the other components.
