The Rosè 61 Berlucchi wine is produced with 60% of Pinot Nero grapes and 40% of Chardonnay. All the grapes come from different places in the Franciacorta area and they are property or under the control of the Berlucchi specialists. The profit is 80-100 quintals per hectare and the must profit is 55%. There is a soft pressing of the bunches with the must fractioning. The alcoholic fermentation in steel tanks starts with the maceration for one night of the Pinot Nero with the rose peels to give color and scents to the variety. The cuvee maturation takes place in the spring that follows the harvest. The wine is bottled with the liqueur of tirage of 24 grams per liter of sugars and selected yeasts. The aging occurs in contact with yeasts for 24 months followed by further two after the disgorging.
Characteristics of the Franciacorta Brut Rosé '61 Docg
The Berlucchi Rosè 61 has a rich soft foam with a good persistence and a perlage very thin and persistent. It has an intense pink color which can change from one harvest to other depending on the phenolic degree of the Pinot Nero grapes. The perfume has elegant wild berries and ripen fruit aromas with delicate scents of yeasts and bread crust. It is winy due to the short maceration of the Pinot Nero on the peels during the wine making process. The taste is fine and elegant, bodied and with a good acidity. The medium-high sugar presence balance the remarkable acidity.
Suggested pairings with this Franciacorta
The Berlucchi 61 Rosè is great as appetizer and it can be matched with cold cuts, flavored main courses and aged cheeses. It is perfect with crustacean or fish courses. It has to be served at 8°C in a Ballon wine glass.
