The white wine Angera of the viticultural cellar the Pollenza is a young wine in every aspects. First for the grapes used for its production, secondly for the born year which is the 2001 from the sage wine making strategy of the technical experts of the Pollenza cellar. Since the beginning it was honored by the DOC certification assigned with the ministerial decree in 2010. The grapes used are the Macerantino one used as 100% single variety. The vine is very prestigious and it comes from Macerata. The cultivation is located in the Tolentino area which is an old Middle-Age city surrounded by wall and full of military districts which are a characteristic of the urban contest. The cultivation ground has alluvial geological characteristics rich of calcareous with a medium deep structure. The vineyard is at 130 meters above the sea level and the vines are cultivated with the French Guyot method. The harvest is in the second week of September and the fermentation takes place in vitrified cementer tanks which don’t leave any scents to the wine and there is a short maceration under temperature control stable at 8°C. This happens after a soft pressure which permits the separation of the must from the flower. The alcoholic fermentation preview the addition of indigenous yeasts but everything is subordinated to the use of tanks under temperature control at 15°C. There are frequent operation of batonnage. The refinement lasts 3 months in tanks.
Characteristics of Angera wine
The wine is excellent with a marked character with some apple and apricot yellow peel aromas. It is clear, fresh and full of floral flavors. The taste is dry but never acid.

It is perfect with all fish courses even the most structured ones. Both with than without fresh tomato sauce. It is perfect with the sole at mugnaia.
