This Valpolicella from Cantina Coffele originates from the vineyards of Campiano, Verona, located approximately 400 m above sea level: the grapes used for its production are a blend of Corvina, Corvinone, Rondinella and Molinara. The bunches are collected manually during the month of October and are placed in boxes of no more than 20 kg. Once pressed, fermentation follows at a temperature between 25-28°C for approximately 10-12 days, during which frequent reassemblies are carried out every day. The final stage of maturation takes place in steel for four months.
