The prosecco Fino in Fondo DOCG of the Zardetto winery expresses the best characteristics of the territory. The San Mor grapes have a unique and wonderful history. In these hills the microclimate, the wind and the ancient spirituality connected to Saint Benedict have created a magic place. This prosecco keeps all these characteristics with its freshness due to the bottle re-fermentation. The denomination is Conegliano Valdobbiadene Prosecco Superiore DOCG produced by 100% Glera grapes. The cultivation area is Cozzuolo di Vittorio Veneto and the San Mor vines area in the core of the DOCG. The manual grape harvest takes place in the second half of September.
Characteristics of the Prosecco Fino in Fondo DOCG
It has an intense straw yellow color with golden reflections. The perlage is very thin, decided and very persistent. The smell has floral aromas of wisteria and acacia. There are also some intense apple, pear and bread crust hints with some light yeast aromas. The taste on the palate is rich, tasty, structured, silky and round during the persistence in the month. The acidity, the mineral and sapid taste is all perfectly mixed. It is creamy and very pleasant.

It is wonderful as appetizer and it has to be served in a flûte at 7°C.
