This rosé wine from the Sicilian Nicosia winery comes from 100% Nerello Mascalese grapes grown on lava fields, at an altitude of 720 m usl: the particular position of the vineyards gives to this wine a very characteristic mineral note. After the manual harvest at the beginning of October, the berries ripen in the cold for 24 hours in contact with the skins before being then subjected to soft pressing. After 2 days of static settling, fermentation follows for about 20 days at a controlled temperature; the refinement includes a stay in stainless steel and then in bottle.
Characteristics of this Sicilian wine
The organoleptic exam shows a pale pink color and an olfactory bouquet of floral and fruity notes: rose, red fruits, pink grapefruit and spices. On the palate it is characterized by minerality, freshness and persistence.
