This sensational rosè by Umani Ronchi is produced with 100% Montepulciano grapes, cultivated in the estate Roseto degli Abruzzi, Teramo. The plants are located on soils characterized by sands and with a south-east exposition. Their elevation of the hill reaches 200 meters above the sea level. 1600 stumps per hectare, treated following the biological method. The manual harvest is planned extraction of the organoleptic features of the variety. The manual harvest starts only when the grapes reach 18,5°, eliminating the bunches that are not perfectly ready. Once the mature grapes arrive in the cellar, they are subjected to soft pressing and to a brief maceration, in order to exalt aromas and to avoid the massive extraction of colour. Then, the fermentation is managed in inox tanks at 16°C. The ageing continues in the same containers for 3-4 months before the bottling.
Features of the Rosato "Centovie" wine
The organoleptic analysis shows a light and elegant pink colour with shiny reflections. The scent recalls flowers and citrus fruits. The taste is elegant, fresh, with a good level of acidity that develops cherry, pink grapefruit. Great persistence.
