The Brunello di Montalcino DOCG Vellocchio of the Fanti winery is the wine that represents the synthesis of 4 great vines. This wine represents the excellence. A very quality wine coming from an extraordinary territory such as the “Vallocchio” area. The wine making process lasts 30 days in stainless steel tanks under temperature control from 25°C to -30°C. The wood maturation lasts 30 months and it takes place for a 50% in barrels of 500lt and the other 50% in oak barrels of 30hl. The refinement lasts other 12 months. The vine used is 100% sangiovese. The vineyards are 10 hectares big and the trees are from 20 to 30 years old. The profit is good and achieved the 60 quintals per hectare. The grape harvest takes place between the last week of September and the second week of October.
Characteristics of the Brunello di Montalcino “VALLOCCHIO” DOCG wine
It has an intense ruby red color with amaranth nuances. The aroma is rich of cherry and prune hints together with blueberry jam, fresh spices, tobacco and licorice fragrances. The taste is absolutely enveloping with intense sweet and fine tannins which give power and structure without being too acid.

The ideal match is represented by the braised meat or in humid with very tasty sauces. It is perfect also with aged cheeses and game. The boar meat is the perfect match for this wine because it reminds the history and tradition of this wonderful wine. It has to be served at 18°C with a long decantation period.
