This Champagne Brut by Maison Delamotte comes from a blend of Chardonnay, Pinot Noir and Meunier grapes grown in the municipal vineyards of Cramant, Mesnil-sur-Oger and Avize. Following the harvest, the grapes are vinified separately, through soft pressing and fermentation at a controlled temperature: after a few months of refinement, the vins clairs are then assembled. A second fermentation in the bottle sur lattes follows as established by the Champenoise Method.
Characteristics of this Champagne Brut
The organoleptic test shows a pale straw yellow color and a fine and persistent perlage. The olfactory bouquet recalls fruity notes of apple, lemon, almond but also floral notes. On the palate it is creamy and with a slightly mineral finish.
Suggested food pairings while tasting this Champagne
Try it in combination with fish-based dishes: tartare, hot appetizers, sushi and sashimi. Serve at a temperature of 8-10°C in the characteristic balloon flute for champagne, to better concentrate the aromas.
